When I try to create a single player world, it takes a while to load.
Then the game crashes.

Hey! I just found a temporary fix!

I was having the same issue, although adding a world to the saves file, rather than it being empty, I was able to avoid crashing, as well as starting a very new world without any issues whatsoever, so far its working great and I am not having any problems with my mods!

Just ensure that there is at LEAST one world in your saves file, or else it might just continue crashing.

Thanks for your report. This bug/suggestion has just been completed. It will be released within one of the upcoming updates.
